On Tuesday 18th November the fantastic celebrity chef Louise Lennox came to our school to teach a Chocolate Master Class with our 1st, 2nd and 3rd Year Home Economcis Students.

Our celebrity chef Louise is best know from TV shows such as “The Restaurant” and “Grubz Up” as well as many appearance on programmes like “The Afternoon Show” and many radio shows such as “The Ryan Tubridy Show” on 2FM, “The John Murray show” on RTE1 and “The Ray D’Arcy Show” TodayFM. Along with this Louise writes a monthly feature in Ireland’s top food magazine Food and Wine.

This cookery demonstration was in organized by the Home Economics Department and funded through  JCSP initatives.

It was an exciting and inspiring 2 hour demonstration where students learnt some fantastic techniques for working with chocolate.

Louise discussed the origins of chocolate and cocoa and students were invited to taste the different types of chocolate to gain a better understanding of diversity in cocoa percentages and ranges on the market.

Louise then proceeded to demonstration a whole host of chocolate recipes to the students.Students were invited up to work with her and help throughout the demonstration. These included making a delicious chocolate fudge followed on by sensational chocolate orange and raspberry chocolate truffles. Students also learnt how to make Chocolate Lollipops.

While these were setting in the fridge Louise went on the show a simple but delicious recipe and technique for making a chocolate brownie flower pot with edible soil and a pink chocolate rose from a brilliant recipe for creating modelling chocolate.

From here Louise proceed to the piece de resistance – an edible chocolate box with an edible bow, filled with all the delicious handmade chocolates.

Overall it was a fantastic demonstration where the students got an opportunity to gain great skills in the areas of pastry cheffing, dessert and chocolate.

Not only did students learn some great new culinary skills but it also demonstrated how areas like numeracy ( weighing and measuring, calculating costs) and literacy ( reading and understanding recipes) are always at the forefront of this practical and invaluable subject.

  1. This is a brief article about the event written by the three Second Year Home Economics students
    (Glen Harris, Roland Boros and Craig Redmond) .

    A famous pastry chef called Louise Lennox came to out school to do a Chocolate Masterclass. She showed us how to make chocolate fudge, fudge lollipops and moulding chocolate, brownies and en edible box.

    She got lots of volunteers to help her. Louise added cool colours and flavours to her chocolate using orange and raspberry essence and pink colouring powder. She also had a spray gun n sprayed the chocolate ribbon gold and bronze.

    We also found out she made cakes and desserts for lots of famous people like Tom Cruise, David Walliams, Tommy Bowe and Bill Cullen.
    Louise told us while filming her famous TV show The Restaurant she has to film for 16 hours a days to make a 23 minute episode.
    Louise added cool colours and flavours to her chocolate using orange and raspberry essence and pink colouring powder. She also had a spray gun n sprayed the chocolate ribbon gold and bronze.

    Her visit was truly a one in a life time experience and for that we would like to thank her very much.
